- rice noodles
- carrot, peeled
- zucchini, peeled
- green beans
- cherry tomatoes
almond butter sauce (approx 2 serves)
- 1 heaped tsp almond butter
- 2 tsp tamari or soy sauce
- 1 tsp minced garlic ~ or fresh!
- 1/2 tsp ginger
- juice 1/2 lemon
- 1 tsp honey
- water to thin to desired consistency
- Start by pan frying the green beans and mushrooms in extra virgin olive oil, salt, pepper and herbs!
- Prepare rice noodles according to packet instructions and then whisk together the sauce ingredients.
- Plate everything up, topping with the sauce & then enjoy!
