Veggie Rice Noodle Bowl with Almond Butter Satay Sauce – Olivia Dowding

Deliciousness in a bowl! Feel free to change up the veggies in accordance to your preferences, but the almond butter sauce is a must in this dish!


  • rice noodles
  • carrot, peeled
  • zucchini, peeled
  • green beans
  • mushrooms
  • cherry tomatoes

almond butter sauce (approx 2 serves)

  • 1 heaped tsp almond butter
  • 2 tsp tamari or soy sauce
  • 1 tsp minced garlic ~ or fresh!
  • 1/2 tsp ginger
  • juice 1/2 lemon
  • 1 tsp honey
  • water to thin to desired consistency


  1. Start by pan frying the green beans and mushrooms in extra virgin olive oil, salt, pepper and herbs!
  2. Prepare rice noodles according to packet instructions and then whisk together the sauce ingredients.
  3. Plate everything up, topping with the sauce & then enjoy!
