Super Simple Green Salad
This salad is a perfect base to any summer salad or green side to any summer spread.

Ingredients
- 1 bag mix leafy greens
- 1 ripe avocado
- Handful of fresh coriander
- 1/2 lemon (juiced)
- 1 tbsp olive oil
- 3 tbsp hemp seeds
- Salt and pepper
Method
In a pan over a low to medium heat lightly toast the hemp seeds, moving around the pan often so that they toast evenly and lightly brown. Remove from the heat and set aside to cool.
Roughly chop the coriander and avocado. In a large bowl toss together leafy greens, coriander, avocado and toasted hemp seeds.
Dress the salad with olive oil and lemon juice. Season with salt and pepper. Toss the salad well so that everything is evenly coated and seasoned.
Served along side roast vegetables, corn fritters, baked tofu, or as part of a summer bbq spread.
