Snowballs – Jackie Bowker

As a gut specialist I’m passionate about making real food recipes that people not only digest well but keep them free from disease. That’s why I make recipes that are gluten free, sugar free, dairy free and this is one of them!

It is an absolute privilege to be invited to create a recipe for @freefromandallergy who have partnered with @colessupermarkets to create a community to support people with allergies.

This recipe is so simple and these are always such a hit!! I want you to make them too!! Enjoy beautiful!

Ingredients

  • 2 cups desiccated coconut, with some extra for rolling
  • 1/2 tsp quality salt
  • 2 cup cashews
  • 8 large medjol dates
  • 2 serves vanilla protein (I used @atpscience)
  • 2 tbsp organic coconut oil
  • 2 tbsp organic unsweetened almond milk (I used @colessupermarkets)

Blitz cashews and dates until mixture resembles sticky crumbs. Then add remaining ingredients except milk. Add almond milk last and only use enough to make sticky enough to roll into balls. Roll in more coconut. Voilà! Set in fridge and devour!
