- Gluten Free Pasta of your choice – I used San Remo Gluten Free Penne
- 3 tablespoons of Olive oil
- ½ cup of Tomato Paste
- 1 White Onion – Chopped in cubes
- 2-3 Tablespoons of Minced garlic
- 1 ½ cup Cooking Cream
- ½ or 1 Chilli (optional)
- 1 ½ cups of reserved pasta water.
Herbs to garnish – Basil Parsley
Salt and Pepper to taste
Cook your favourite gluten free pasta according to cooking directions on the pasta box.
In a large deep frying pan, add olive oil and sauté onion until caramelised on medium heat.
Add in minced garlic, and chilli, cook for a minute.
Add tomato paste, stir through tomato paste for 2 mins.
Add in heavy cream and pasta water, season with salt and pepper and continue to simmer for an
additional five mins, on medium low heat.
Once your pasta is cooked, drain and add pasta to your sauce.
Add more pasta water if sauce is too thick, if sauce is to thin keep stirring on low until thickens
When your ready to serve, scoop your delicious Simply Da Best Pasta into bowls, garnish with herbs
and Parmesan cheese.
