Jammy Blackberry Slice – Lauren

Vegan and Gluten Free 

 

Ingredients

 

Base: 

  • 1/2 cup of fresh dates
  • 1 cup of almonds
  • 1/4 cup of coconut
  • 1 tbsp coconut oil

 

Blackberry Jam Layer: 

  • 1.5 cups of fresh Blackberries
  • 3 tbsp chia seeds
  • 1 tbsp coconut oil

 

Method:  

  1. Mash the Blackberries and stir through the chia seeds and melted coconut oil. Let sit for 15 mins.
  2. Blend all base ingredients in a food processor with melted coconut oil.
  3. Press into a small pan, top with blackberry layer and drizzle with chocolate.
  4. Freeze for an hour and then serve
