Ingredients
- 1 cup Mixed Beans, drained & rinsed
- 1/3 cup Quinoa, cooked as per packet instructions
- ¼ (or 1 cup) Cabbage, shredded
- ½ Avocado, sliced
- 1 Carrot, sliced
- ½ sheet Seaweed, flaked on top
- ¼ (or 1 cup) Cauliflower Head, cut into florets
- ½ tsp Turmeric
- ½ tsp Cumin
- Salt & Pepper, to taste
Dressing
- ¼ tsp Sesame Seeds, lightly toasted (if time permits)
- 1 tbsp Tamari
Method
- Add cauliflower, turmeric, cumin, salt and pepper to a bowl and toss until lightly coated.
- Add golden cauliflower to baking tray and bake in oven for 15 minutes.
- Place all ingredients in a bowl and drizzle with dressing.
