Ingredients:
Bowl
- GF falafels
- 180g Halloumi, cut into 1cm strips
- 3x cups mixed salad leaves
- 1x 400g can of chickpeas, drained
- 1x green capsicum, chopped
- 1x cucumber, chopped
- 200g green beans, halved
- 200g snow pea, ends removed
- 1/2 cup peas
Sauce
- 4x tbs Greek yoghurt
- 2x garlic cloves, crushed
- 1/2 lemon, juiced
- 1/2 cup fresh mint, chopped
- Pinch of salt and pepper
Method:
- Prepare falafels and halloumi as per packet instructions
- In a large bowl combine salad leaves, chickpeas, capsicum, cucumber, green beans, snow peas and peas
- Top salad with falafels and halloumi strips
- In a small bowl mix together sauce ingredients and add to salad to serve
