Chocii Chip Cookies – My Gluten Free Lifestyle

Ingredients

  • 1 2/3 Cups Gluten Free Plain Flour
  • 1 ½ teaspoon Bicarbonate of soda
  • ½ Cup of brown sugar
  • ½ cup of caster sugar
  • 150grams of butter melted
  • 1 egg, lightly whipped
  • 1 cup of dark chocolate chips
  • ½ cup of milk chocolate chips

Method

Preheat oven to 180 Celsius or 150 Celsius fan forced.
Line a cookie pan with baking paper.
Grab a large mixing bowl and add all dry ingredients to the bowl, add melted butter and egg, and stir to combine, add in chocolate chips, and continue to combine together.
Once your cookie dough is combined, use a ice cream scoop to form cookie dough balls.
Place formed cookie dough balls on the your cookie pan, about 10cm apart.
Bake for approximately 13-16 minutes or until golden.
(Handy Tip: if your not sure if your cookies are cooked yet, simply remove one cookie from the oven and cut in half, if dough is too sticky and raw looking, return to oven and cook for longer, as every oven is different, cooking time may vary)
Once your Chocii Chip Cookies are cooked, remove them from the oven and allow them to sit on the cookie pan for 10mins.
Once your Chocii Chip Cookies have cooled, remove from the cookie pan and place them on a cooling rack, for an additional 10mins, (this allows your cookies to come to room temperature and get crunchy and chewy.)

Now you’ve waited long enough, grab a glass of milk and enjoy a Chocii Chip Cookie.
