- 2 Chicken Breast ( I used Local Free Range Organic Chicken Breast)
- ½ cup Coriander
- 1 Onion
- 2 Garlic Cloves
- 4-6 slices of gluten free bread
- 1 Chilli – ( optional)
- Oil for frying
In a high powered food processor, add all ingredients and blitz until all ingredients are combined.
Once mixture has come together, roll into balls (bite sized).
Pop rolled Asian Chicken Bites in the fridge for five minutes.
Heat a large frying pan, add in oil (medium heat) , take your Asian Chicken Bites out of the fridge and add a few to the heated oil, cook the Asian Chicken Bites until chicken is fully cooked flipping over, (about 3-7 mins depending on Asian Chicken Bites ball size), repeat until all the Asian Chicken Bites are cooked.
Serve with rice and veggies or serve as canapés with your favourite Asian sauces.
